My interest in knives all began when I was a little boy, who join the Boys Scout in primary school. I was gifted my first ever commando knife to use when I was tracking in the jungle in Sarawak, Borneo. Instantly I was hook, it had many essential items which came together with it and hidden in the knife's handle: a compass, fishing hooks, matches, sharpening stones, some thread and also wires.
Eventually I learned to make use and added on more essential kits to my knife set. As time flew by, I could say I was the owner of a few Victorinox Swiss Army Knives which I love to sharpen and play with, however every kid has to grow up and find a job.
I started working professionally in the Food and Beverage industry after getting my honours in French Brevet De Technicienne Hotelleries specialising in Cuisine.
In Cuisine, everyday I am scoring, trimming and cutting with a knife. sometimes a few different kinds of knife for specific jobs; deboning lamb, filleting fish and chopping up game or chicken.
I have been working in many varieties of kitchen setup for more then 20 years, from casual Western European dining to fancy Japanese cuisine, hotels, cafes, fine-dining, off-shore rigs and cruises just to fill the trills.
Currently I am working in a Japanese Restaurant, baking and running a small Knife Sharpening Service from home. With many years working in the kitchen, countless number of knives I have used till it turns dull, but never thrown away a single knife, instead I would give it LIFE!
As a knife or knife sharpening enthusiast, I started with some basic whetstones and gradually added more to the collection in order to find the perfect edge... which gave me the idea to start this small service as a pastime and also as a sideline.
Few people realise how important the edge is, not to their everyday live but to mankind as a whole. In the dawn of man's existence, he basically did three things; he hunted, he fished, and he fought to stay alive. he accomplished all three of these things through the use of the edge and his very survival was dependent on it. He had no sharp teeth, no sharp claws, wasn't very strong, and was slower than the other beast. However, he had one thing in his favour - THE EDGE.
He first took a piece of rock, probably one already ideally shaped, and ground it against another rock, thereby producing an edge. He then attached this edge to a stick, enabling to strike out on it, as with a spear or an axe. With this weapon and his skills, he more than made up for his weaknesses. With his edge man gained respect and ensure his survival.
So perhaps man's most important invention was not really the wheel, for if he had not invented the edge first, he would never have survived to invent the wheel.
